New School Meal Rules Offer Opportunity to Get More Shrooms Into School Lunches

New federal school meal rules are changing how lunch is served in schools in Ohio and across the nation. Another result of the new rules: New opportunities for mushrooms. Yes, mushrooms.

The Mushroom Council sees the new rules as an opportunity to get more mushrooms into school lunches, and plans to work with meat processors to develop a “ready to eat, meat-mushroom blend” just for school lunch programs.


Mushrooms add a serving of vegetables to plates, according to the [Mushroom Council].
“Chopped mushrooms look similar and blend seamlessly with meat, so students’ favorite meals can be made healthier without losing taste, volume or satisfying texture,” Bart Minor, president of the San Jose-based council, said in the release.
